Recipe - Chicken Soup

For me, a bowl of soup on a cold, winter day is so comforting.

This was one of the first recipes I perfected after Dennis and I started living on our own. I also think it was the first time I cooked with fresh herbs! The original recipe came from a cookbook I received at my bridal shower - The Bride and Groom First and Forever Cookbook. I don’t even remember who gave it to us. We didn’t register for it, I think it was probably something someone gave us along with something from our registry.

I’ve modified it just slightly over the years and it’s become one of those recipes I don’t need to look up - I know it by heart. Dominic and Zachary love it - Dominic actually requests it quite often. It’s become a heavy part of our dinner rotation in the cold months.

As I said, I did modify it a little over time, but I certainly want to credit the cookbook mentioned above. Generally speaking, the book is a little cheesy, something meant for newlyweds, but everything I’ve made out of it has been a homerun. I highly recommend you pick up a copy. Bonus, many of the recipes use ingredients that are already prepared to save a little time.

When I make this soup on a weeknight, I chop all the veggies and cut up the chicken when I do Sunday meal prep. Onion/thyme get their own bag because they get added together. Carrot/celery/chicken go in their own bag as well. It makes things go really easily especially on a busy evening after we all get home from school.

Ingredients:
olive oil
1 chopped onion
fresh thyme
garlic
1/2 cup white wine
chopped carrot
chopped celery
shredded meat from 1 rotisserie chicken
8 cups chicken broth
egg noodles or some kind of pasta
fresh parsley

Directions:

  1. Heat olive oil in a soup pot.

  2. Add the onion, thyme, and garlic and cook until pretty softened

  3. Add the wine and cook until much of the liquid has evaporated

  4. Add the carrot, celery, chicken, and broth. Bring to a boil and simmer for about 15 minutes

  5. Add the egg noodles and cook until done

  6. Throw in the parsley just before serving and stir

I kind of eyeball the ingredients. We like our soup to be pretty dense and hearty, so there’s a lot more “stuff” than broth.
