Comfort Recipe - Chicken Soup
It’s election day here in the US, so I thought I’d share a comfort recipe. If your house is anything like mine, you’re spending the day refreshing results and speculating. So a little comfort is in order.
Easy Chicken Soup
Ingredients
olive oil
one onion, chopped small
fresh thyme
1/2 c. of white wine
garlic
carrots, cut small
celery, cut small
meat from one rotisserie chicken, cut small
8 (or 10 if you went heavy on the chicken and veggies) cups of chicken broth or stock
small pasta (1/2 c. or so)
fresh parsley, chopped
roasted garlic
In your soup pot, drizzle some olive oil. Sauté your onion and thyme until the onion is translucent. Salt and pepper to taste. Add some garlic.
Add about 1/2 c. white wine to the onion and deglaze the pot until a lot of the liquid has cooked out.
Add your broth, carrots, celery, and chicken. Bring to a boil. Reduce the heat and simmer around 20 minutes, until the veggies are soft.
Add about 1/2 c. small pasta and simmer until the pasta is cooked. Feel free to add more pasta if you want a dense soup, or if you’re trying to get your kids to eat it!
Turn off the heat and stir in about 1/4 c. fresh, chopped parsley and a spoon of roasted garlic.
