Recipe - Instant Pot Chicken and Rice

Dennis found this recipe for me about a month ago. I was looking for an Instant Pot recipe that I could put together on a busy school night. This hit it out of the park.

Reasons I love this recipe:

  • You don’t have to pre-cook anything. You just kind of layer it in the Instant Pot and let it do its thing.

  • This works well for a school night - the cooking time isn’t too long, even though the Instant Pot does need to come to pressure and spend 10 minutes naturally releasing.

  • One pot. Easy clean-up.

I modified things a little. I wanted to make this taste a little bit like my chicken soup recipe. I added fresh thyme to the onion. I also reduced the chicken broth by 1/2 c. and added 1/2 c. white wine. Finally, I cut the chicken breasts into chunks and I found this worked much better. The last time I tried it, I used brown rice and it came out kind of soupy - so if that’s a thing you’re going to do, you should consider reducing the liquid a little. I’m still playing around with it.

I also used this same basic theory and did a version with stew beef instead of chicken, beef broth and red wine instead of chicken broth and white wine. And I used a can of french onion soup instead of cream of mushroom. This tasted really good but it was also a little soupy - I think the french onion soup was a lot thinner than the cream of mushroom. I also still need to play around with this one.
